Tasty Goodness - Guy's Dragon's Breath Chili Recipe


Dragon's Breath Chili
Guy Fieri's Dragon's Breath Chili is the best  chili. I know people get one recipe and keep it forever, but this time you'll want to adopt a new chili recipe as your favorite. Guy Fieri, of Guy's Big Bite, on the Food Network, showed off big time with this chili recipe from the episode, Fuel the Fieri.
Here's the video for this recipe. You'll  be happy you tried it, but allow time to prep - the chopping and dicing takes some time and as we know things work better when you're well prepared. You don't have to change a thing about this recipe...believe me it's the best chili recipe I have tasted in a long time. Meat lovers will love this - Guy uses boneless chuck, course ground beef and Italian sausage, very satiating and comforting.  Well, let's just say....it's a bonanza of beef and pork cooked in bacon grease....and just in time for the cool weather. Ingredients

  • 2 tablespoons butter
  • 3 tablespoons bacon grease, or canola oil
  • 2 red bell peppers, diced (about 2 cups)
  • 2 jalapenos, minced (about 2 tablespoons)
  • 3 Anaheim chiles, roasted, peeled, chopped
  • 3 poblano chiles, roasted, peeled, chopped
  • 2 yellow onions, diced (about 2 cups)
  • 1 head garlic, minced (about 1/4 cup)
  • 1 pound boneless chuck, trimmed and cut into 1/4-inch cubes
  • 2 pounds ground beef, coarse grind
  • 1 pound bulk Italian sausage
  • 2 teaspoons granulated onion
  • 2 teaspoons granulated garlic
  • 3 tablespoons chili powder
  • 2 teaspoons hot paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons cayenne pepper
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly ground black pepper
  • 2 cups tomato sauce
  • 1 cup tomato paste
  • 12 ounces lager beer
  • 1 cup chicken stock
  • 2 (15.5-ounce) cans pinto beans, with juice
  • 2 (15.5-ounce) cans kidney beans, with juice
  • Double-Fried French Fries, recipe follows
  • Saltine crackers, for garnish
  • 1 bunch green onions, thinly sliced
  • 1 cup shredded Cheddar

Directions

In large stock pot over high heat, add butter and bacon grease. Add bell pepper, jalapeno, chiles and onion and cook until caramelized, about 5 minutes. Add garlic and saute a minute longer. Add chuck and brown. Add ground beef and sausage to brown and stir gently, trying not to break up the ground beef too much. Cook until meat is nicely browned and cooked through, about 7 to10 minutes. Add in granulated onions, granulated garlic, chili powder, paprika, cumin, coriander, cayenne, salt and pepper and cook for 1 minute. Add in tomato sauce and paste and stir for 2 minutes. Stir in beer and chicken stock. Add beans, lower heat and simmer for 2 hours.
Serve in bowls over Double-Fried French Fries and garnish with Saltine crackers, green onions and shredded Cheddar. (Optional)

Double-Fried French Fries
  • 4 (4 to 5-inches long) russet potatoes (about 2 pounds)
  • 2 quarts canola oil
  • 1 tablespoons fine-grain sea salt
  • 1 teaspoon freshly ground black pepper
Peel potatoes on the sides, leaving the ends with the skin on. Cut the potatoes into 1/3-inch slices and then slice into 1/3-inch sticks. Fill a large bowl with water and soak potatoes, submerged, for at least 30 minutes up to 24 hours. This will help remove the excess starch from the potatoes and keep them from oxidizing.
Heat a heavy stock pot fitted with a deep-fry thermometer with oil to 325 degrees F.  Remove potatoes from the water, and pat dry to remove excess water. Add 2 handfuls of potatoes to hot oil. There should be at least 1-inch of oil above the potatoes. Par cook until potatoes are light brown, 5 to 7 minutes. Remove potatoes, gently shaking off excess oil and let drain on rack. Repeat until all of the potatoes are par cooked.
Raise heat of oil to 350 degrees F.  Cook potatoes again, 2 handfuls at a time, until golden brown, about 2 minutes. Remove from oil, shake off excess oil, and season lightly in a bowl with salt and pepper. Repeat until all potatoes are cooked.

Yield: 8-10 servings

Spicy Chipotle Shrimp Tacos w/Lime-Cilantro Sour Cream Sauce & Steamed Lobster Claws

I love finding good recipes, but I really love it when the recipes are from regular home cooks. This week, I am showcasing this delicious spicy chipotle shrimp recipe from a guy, who is a construction worker by day and a gourmet meal constructor by night.  His name is Justice Stewart and he says he is just following his dream. Here is an article about him in a community newspaper, Small Town Living.  This chipotle seasoning is the secret here and they are delicious, I've made them several times. Try them, I know you will love them too.

Ingredients:

2 teaspoons chili powder
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground chipotle chile powder
32 peeled and deveined large shrimp (about 1 1/2 pounds)
1 teaspoon olive oil
8 (6-inch) white corn tortillas
2 cups shredded iceberg lettuce
1 chopped tomato
1 chopped jalepeno pepper
1 ripe avocado, peeled and cut into 16 slices   Steamed lobster claws (optional)
Directions:
1. Combine first 5 ingredients in a large bowl; add shrimp, tossing to coat. 2. Heat oil in a large nonstick skillet over medium-high heat. Add shrimp mixture to pan; cook 1 1/2 minutes on each side or until done. Remove from heat. 3. Heat tortillas in microwave according to package directions. Place 2 tortillas on each plate; arrange 4-5 shrimp on each tortilla. Top each tortilla with 1/4 cup lettuce,diced tomato,a couple of jalepeno slices, 2 avocado slices, and 1 1/2 tablespoons lime/cilatro cream sauce. Garnish with lobster claws (optional)
Lime/Cilantro sour cream sauce:
1 cup sour cream
1/4 cup mayonnaise
3 TBS minced fresh cilantro
Grated zest of 1 lime
1 TBS fresh lime juice
Combine all the ingredients in a bowl and whisk until smooth. Refrigerate up to 4 hours until ready to use.

Tasty Goodness - Momma Neely's Pot Roast on the Food Network



It's fall and while the leaves are turning color and the weather gets crisp and cool, we can truly say it's time for some warm and comforting foods.  I was going through some of my favorite recipes and found this Pot Roast recipe by one of my favorite cooking couples - the Neely's. Pat, Gina and her brother Ronnie prepared Momma Neely's tender Old-Fashioned Pot Roast with Roasted Garlic Fingerling Potatoes. Let's celebrate the new season with some good old-fashioned cooking. Tasty Goodness - Beef and Bean Chili

With the changing of the weather, what could be better than a good, tasty bowl of chili. It is good, with easy to find and well budgeted ingredients.  You can even adjust portion size if there are some dietary concerns and stretch servings per person. But, the taste of chili on a cool autumn day is very comforting and satiating .

Beef and Bean Chili
Ingredients
  • 1 tablespoon olive oil
  • 2 large red onions, chopped
  • 5 tablespoons chopped jalapeño chilies with seeds
  • 8 garlic cloves, chopped
  • 2 1/3 pounds ground beef (15% fat)
  • 1/4 cup chili powder
  • 2 tablespoons ground cumin
  • 1 teaspoon sweet paprika
  • 1 28-ounce can diced tomatoes in juice
  • 2 15 1/4-ounce cans kidney beans, drained
  • 1 14-ounce can beef broth
Toppings
  • Sour cream
  • Grated cheddar cheese
  • Chopped green onions
  • Chopped fresh cilantro
Preparation

Heat oil in heavy large pot over medium-high heat. Add onions; sauté until brown, about 6 minutes. Add jalapeños and garlic; sauté 1 minute. Add beef; sauté until brown, breaking up with back of fork, about 5 minutes. Add chili powder, cumin, and paprika, then mix in tomatoes with juices, beans, and broth; bring to boil. Reduce heat and simmer until chili thickens and flavors blend, stirring occasionally, about 45 minutes. Skim any fat from surface of chili. (Can be made 2 days ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep refrigerated. Bring to simmer before continuing, stirring occasionally.)
Ladle chili into bowls. Serve, passing bowls of sour cream, grated cheese, green onions, and cilantro separately. Makes 6-8 servings.
